Few things bring people together like food. Growing up in the South, I know this to be true - no doubt about it. I was raised to make more than you think you'll need, so that people can feel comfortable going back for thirds. I know that the menu isn't what makes a meal perfect, as much as having someone to share it with. Still, having a good menu and a great friend to share it with is the best meal of all.
Jennifer Little is a Fort Collins local photographer (she photographed my home, which you can see here) and I am so happy to have connected with her! We've been scheming ever since. One thing that I would like to bring to our blog is more videos. There's something about a cute short video that inspires me so much!! So, Jennifer and I got together last week, and she taught me how to make almond milk! I've never thought much about it, because I don't like milk at all. I usually splash enough on my cereal to make it wet, but I don't ever drink it plain! She told me that almond milk is completely unlike the storebought kind, and I figured that if I was going to the trouble to make almond milk from scratch, I should definitely taste it! I didn't realize how simple it is. Holy cow, it's REALLY simple, and REALLY good!! It's a milk I can actually drink!! Best of all, if you're on a Whole30 or clean eating diet, this is compliant (although they don't really encourage you to have a lot of nuts as your choice of fat...if you NEED something, this is it!)
We used the almond milk to sweeten our tea just a little bit. Not that it needed anything...but the almond milk was a great addition to The Republic of Tea's blackberry sage tea. Oh my goodness...I'm not a big tea drinker, but this is phenomenal! I've had several cups since we made it last week. Just the right hints of blackberry and sage, and not at all overpowering.
We also made some tea and drop biscuits (NOT whole30 compliant haha) to go along with it!! I am so excited to share the video with you!! It was a really relaxed, laid back morning with delectable food!
The biscuit recipe was slightly adapted from The Nourishing Home. They're gluten free using Bob's Red Mill almond meal! We also made a delicious honey, rose, and vanilla bean glaze. Wish you were there with us! Sometimes I want to host a HUGE breakfast and invite every person everywhere, and then I realize I live in a 900 square foot house. If I ever win the lottery, you're all coming over for tea and biscuits.
HOMEMADE ALMOND MILK
- 1 Cup Raw Almonds
- Boiling water
- 1 medjool date to sweeten (optional)
Cover almonds with boiling water and soak them for 1-2 hours to blanch them. After soaking, using very little pressure, you can pop the nut out of the skin leaving the almonds blanched.
Rinse the almonds thorougly under running water. Place almonds in a blender with medjool date and cover with 2 cups of filtered water. Blend for two minutes.
Gather a glass bowl, strainer, and cheese cloth. Line strainer with cheesecloth and pour blended almonds over the cheesecloth. When the milk has drained, squeeze the excess milk into the bowl. You will be left with two cups date-sweetened almond milk! Use within 2-3 days.
